These mates have just bought their own van and built a campervan, parts bought at the local Mitre 10 Mega and constructed in the car park. Ingenuity at its finest.

Waitomo Cave – insane!

This the most incredible sign you’ll ever see. It’s magic. The Waitomo Caves are among New Zealands most incredible wonders and a must see on your travels. Just amazing.

Burgers to die for

Before checking out this video it never occurred to me that I could make burgers in my campervan – it’s friggen delicious. I made a few alterations to the recipe and it’s a winner!! Give it a go on your next trip.

Pan Fried Frittata

Ingredients 300-400g fresh tricolour fettuccine 1 Tbsp olive oil 1/2 onion, peeled, finely sliced 1 clove garlic, peeled, crushed 300g chicken breast, skin and bones removed 3/4 cup frozen peas, blanched 1/2 cup chicken stock (made with 1/2 stock cube dissolved in 1/2 cup water) 1 cup cream 1/2 cup shredded basil leaves 1/4 cup

Cinnamon Pancakes

WHAT YOU’LL NEED:  1/2 cup of butter 1/4 cup packed light brown sugar 1/2 tablespoon ground cinnamon 1/3 cup cream cheese 3/4 cup powdered sugar 1/2 teaspoon vanilla extract 1 cup pancake mix (you can buy this from a local corner shop or supermarket!) 3/4 cup milk 1 tablespoon oil 1 egg METHOD:  In a melt half of the butter (1/4 cup)
